Collection: ASATSUYU
The Asatsuyu cultivar originates from tea seedlings grown in Uji near Kyoto. It has excellent sweetness and umami. The plant is vulnerable to cold, has small leaves and produces a low yield resulting in a very limited number of asatsuyu single varietal teas available on the market. The body and flavor is delicate and suits those who prefer an elegant tea. The asatsuyu varietal is often characterized as a natural Gyokuro tea.
Gyokuro tea (literally jade dew) is a first flush tea which is completely shaded for around 20 days before harvest. This artificial reduction in exposure to sunlight manipulates the growing processes of the tea plants in order to reduce the bitterness and increase umami in the tea’s flavor.
