Both conventional and many organic tea farmers use nitrogen rich fertilizers to enhance the sweetness and umami of tea leaves. Musehi means no fertilizer. These teas are from unfertilized fields where the tea absorbs only the nitrogen available in the natural environment and the farmer’s only intervention is weeding.
