茶葉にはたくさんの酵素が含まれていて、収穫した直後から酸化が始まるが、煎茶は、茶葉を数時間以内に加熱することで酸化酵素の活性を止め、鮮やかな深緑色と清涼感を残して、旨味、苦味、甘みのバランスを調和させる製法。日本で生産される緑茶の80%以上が煎茶の製法で作られている。江戸後期から明治時代にかけて、手もみによる煎茶の製法が確立。現在のような形状や色になった。
